This recipe reminds me of my favorite childhood grilled cheeses, ones just oozing with cheese and so comforting. Now as an adult I still enjoy a classic grilled cheese or alternately a cheese pizza, though I usually make them with the addition of tomato and fresh herbs for some added flavor!
This combination is also great to help you use up odds and ends in your fridge. You can use a variety of cheeses for this and don’t be afraid to mix it up! If you have a bit of cheddar and also some brie lying around use them both! Maybe you have some soft goat cheese and also some parmesan and a tiny bit of gouda, that’ll work! The same goes for herbs here. Fresh herbs are a great addition to add some punch to this pizza and you can use anything from chives and basil to rosemary and parsley. Even some green onion would be a great addition.

Summer Grilled Pizza
Makes 2 servings
1 Banza pizza crust
⅓ to ½ cup of your favorite cheese(s)
3-4 cherry tomatoes
1-2 tablespoons fresh herbs
Pepper to taste
Preheat Oven: Preheat the oven to 400 F.
Prepare Ingredients: While the oven preheats, shred or crumble your cheese. Slice or quarter your cherry tomatoes. De-stem and chop your fresh herbs.
Assemble Pizza: Remove crust from the packaging and spread the cheeses on the crust to cover it well but leaving a crust around the edges. Place your cherry tomato pieces on the pizza.
Bake: Place the pizza on the middle rack and bake until the cheese is melted and bubbly, about 13 minutes.
Finish Pizza: Once the crust is browned and the cheese is melted, remove the pizza from the oven and top it with the fresh herbs and pepper to taste. ENJOY!
